My boss is vile. Having refused to roll my contract over, I have been demoted but stuck in the same part of the organisation. My boss insists on me having a major role in finding, discussing and appointing my replacement. If I express that I don't want to do this, he says I am 'too sensitive'. He is supposed to give feedback and do professsional plans, but wont, saying that 'Successful people know their own weaknesses and address them'.
I keep waiting for fate to catch up with him and his rampant ego.

Tell him "Oh yeah? When do you plan on addressing your weaknesses?" and if he says he doesn't have any just smile and say "I guess it's all in the eye of the beholder, huh?" and walk away.

This means he doesn't have a clue as to what you did in your former position and he wants you to do HIS work. Have fun! Find a total moron who will totally screw things up! Even better, do the interviews and look for an argumentative moron who will make your bosses life miserable!

RUN!!! Okay, don't run out of there, but start your escape plan now, so you can walk out of there one day and never come back! Whether you change careers or just change jobs, no one should have to work for a jerk! Maybe I'll make that my official motto: "No one should have to work for a jerk!"
